Whole Wheat Rotini with Rapini, garlic and white beans

This is a really quick and easy meal that is suitable for lunch or dinner. It is high in fiber, protein and high in calcium, iron and vitamin A due to the rapini.

You will need:

1 box of whole wheat rotini
1 bunch of rapini (broccoli rabe)
2 tablespoons olive oil
4 cloves of garlic
1 can white kidney, navy or romano beans (drained and rinsed
1/2 vegetable bouillon cube
red hot pepper flakes (optional)

First bowl a pot of salted water and add a box of rotini


Rinse a bunch of rapini (broccoli rabe), take the leaves and flowerettes off the stalks and chop.


After the pasta has been cooking for about 5 minutes, add the rapini.


Cook for an additional 5 minutes until the pasta is al dente and rapini is just cooked. Reserve 1 1/2 cups of pasta water and drain.

Rinse out the pot and heat 2 tablespoons of olive oil.

Chop 4 garlic cloves.



Saute in the oil for 1 minute until fragrant.



Add the reserved pasta water, 1/2 vegetable bouillon cube and beans.


Cook until heated through, add pasta, toss to coat and then serve. I prefer hot pepper flakes on mine but you can leave that out if you so wish.
